The unaged plata has a nice kick of roasted agave on the sweet nose, along with citrus, pepper and brine. The soft palate offers lime, agave and spice with grassy notes. The long finish lingers with more agave, fruit and pepper. Competitively priced and well suited for mixing in cocktails

Master distiller Jesús Hernandez produces Olmeca Altos tequila using traditional methods, from slow-cooking the piñas in a brick oven to crushing the cooked piñas with a tahona (stone wheel) and distilling with small copper pot stills. Olmeca Altos also touts their use of cultivated yeast, rather than “wild or commercial yeast that is often used by competitors.” The reposado is aged 8-10 months in used bourbon barrels.

Olmeca Altos Añejo Tequila is the latest in the brand's lineup and it begins with 100% blue weber agave harvested 7,000 feet above sea level in the volcanic rich soils of Los Altos, Jalisco. Traditional production methods are used, from slow-cooking the agave in brick ovens then crushing the agave using a tahona stone, they way it was done 500 years ago. After double-distillation in copper stills, it ages 18 months in bourbon oak barrels before bottling.
